Birthday Treat!

I think of all days to have some of those occasional sweets that I'm trying to keep occasional, my birthday is the day to do it. In honor of my birthday, and the fact that my birthday was National Peanut Butter Lovers Day (according to Tasty Kitchen), I made peanut butter brownies. I took my favorite, non-NT recipe, and NT-i-fied (well, kinda) it with unrefined sugar and non-grain flours.

Peanut Butter Brownies

Brownie base:
1 stick butter, melted
2 eggs
1/2 cup cocoa powder
1/4 cup almond meal
1/4 cup arrowroot
3/4 cup Rapadura (this could probably get cut down to 1/2 cup)
scant 1/4 cup sorghum syrup
1/2 tsp. vanilla
pinch of salt

Peanut butter topping
1/2 cup (ish) natural peanut butter (ingredients: peanuts)
1/2 stick of butter, softened
pinch of salt
Tbsp. or two sorghum syrup

1 Rapunzel dark chocolate bar, chopped

Preheat oven to 350. Butter a 9" square pan. Stir together all the brownie base ingredients and bake for about 10-15 minutes. Beat together the peanut butter topping ingredients and pour over the brownie base. Sprinkle with chopped chocolate. Return to the oven for 10-15 minutes. Probably best to let them cool before cutting and eating, but I didn't. Makes 6 generous, or 9 reasonable brownies.
